Anthony Bourdain's favorite lechonera! El Rancho de Apa is a family business that began in the 1950s, founded by Bernardo Ramos, who laid the foundation with hard work, character, and tradition. His son, Luis "Apa" Ramos, took up that legacy and worked it for over 40 years with humility and commitment, making it a landmark for lovers of good roasted suckling pig. Today, Apa's daughter, Delinés, leads this third generation, being the driving force behind every excellent suckling pig that comes out of our kitchen.
