Chef's Garden is a sustainable and eco-friendly signature cuisine focused on the ancestral and naturalized Caribbean ingredients that have shaped the region for the last four centuries. We are dedicated to identifying, researching, cultivating, and harvesting the unique ingredients of our Caribbean region. We explore all the possibilities of each ingredient to create dishes that tell stories of culture, history, and hope. Our main offering is a multi-course tasting menu. We serve an average of seven courses and change the menu every three to four weeks. We never repeat a menu. We also have a tapas menu with lighter options and seasonal ingredients. We have organic gardens surrounding the restaurant where we grow ingredients for the kitchen. Approximately 70% to 80% of the ingredients we use come from farms or fishermen within 35 miles (55 kilometers). We are an off-grid restaurant. 10% of our electricity is generated by solar panels. We collect approximately 60,000 gallons of rainwater per year. The water is filtered and used for gardens, bathrooms, and sinks.
